Apple Cookies

It’s the tail end of the AM, breakfast was delish- you can’t go wrong with overnight blueberry oats. They just make life that much better. After a busy morning, filled with meetings and presentations, I have begun to flag, my energy levels are dipping and concentration isn’t at its peak. It is time for a pick-me-up brunch with a punch-POW!

ditch the calorie laden, sugar filled, fat swirled cookie today, not forever- oh no, I won’t dare advise such! But just for today, you can.

Don’t worry, all the goodies will be chucked into this cookie-  pinky promise.



Serves 6

  • 1 Apple
  • 1 Tablespoon Peanut butter
  • 1 Tablespoon Chocolate chips
  • 1 Tablespoon Almonds
  • 1 Tablespoon Shredded Coconut


  1. Wash your apple and remove the core with a corer.
  2. Slice your apple into rings, as evenly as possible.
  3. Spread peanut butter on one side with a spatula and go crazy topping your slice with chocolate chips, coconut and seeds.
  4. Voila, enjoy!
